A Paratha, is a very famous food among Asian community around the world. It’s a daily meal especially in the lunch time or in dinner in Eastern world. It is served with some sort of gravy.
Potato is famous in the western world and used in everyday’s food and served with many meals both in lunch and dinner.
A home made ‘Crispy Potato filled Paratha’ is a meal that has both the taste of East and the West.
“East or West , home made is the best“
Step 1:
Makin dough with chapati flour: Take one cup on chapati flour (Atta) in a medium size bowl. Add some water in it to make a hard dough. Mix it together with hands. When the flour dough become ready, cover the bowl and lave it for 10 minutes.
Step 2:
While you are waiting for the dough to be ready, take medium sized potatoes, 2 – 4 potatoes would be enough. Put them in a deep bottomed pan,fill it with water and boil them for 15 minutes. Use a fork or kitchen knife to check if the potato is fully soft from inside.
When the potatoes are soft and boiled, drain the water. Peel the skin off and mash them in another bowl(Note: do not mash them fully), add spices that you have; I have added only a pinch of salt, red pepper, black pepper ( to your taste), green coriander and few leafs of green mint. Mix all of them properly.
Step 3:
Take a small amount of ready dough and make two small circular of dough, about the same size. Flatten the dough with a roller.
Use one dough circle as base, put ready potato mixed on top. Use other dough and cover it from the top. Join the edges thoroughly use roller again and flatten it. Do it very slowly. You can also use dry flour for, to not to stick dough with the roller.
When the dough is flatten with the potato mixture inside, use a pan and cook. Use butter or butter ghee on both sides to make bread. Cook either side about 2 minutes on a medium flame (If the flame is higher the bread will cook from outside only).
When you see both sides are light brown and crispy, remove bread from the pan. Let it cool for 1 minute, your ‘Crispy Potato filled Paratha’ is ready.
Serve it as it is, yogurt, ketchup or mayonnaise
